Root vegetables such as sweet potato and beetroot are at their best at this time of year. James Sommerin’s duck dish combines their earthy flavours with a hint of lavender (yes, lavender) which is both surprising and masterful. Lavender salt is often used to flavour duck in French dishes and in this recipe you’ll make your own Herbes des Provence by dried lavender with coriander, fennel and cumin seeds with Szechuan pepper. Woody maple syrup added as a glaze will give the duck breasts a glossy finish.
Duck breast with chicory and potato dauphinoise - Josh Eggleton
This duck breast recipe from Josh Eggleton is a supremely comforting dish for winter nights. You’ll love the bitter notes of chicory against the creamy potato dauphinoise. Although the whole dish takes an hour and half to cook, if you’re pressed for time you can replace the dauphinoise with creamy mash and the dish will be ready within an hour. Gressingham duck, is a beautiful cross between Wild Mallard and Pekin reared in the eastern parts of England and its gamey flavour complements the caramelised chicory perfectly.
Massamam Duck Curry - Matthew Tomkinson
Finally, how about a duck curry? Duck’s not often the first ingredient that comes to mind when thinking of curries, but Gressingham Duck’s gamey flavours work well with Thai spices and Matt Tomkinson’s Massaman duck curry is a great winter comfort dish without being a fiery curry.
